You’ll need:
3 tablespoons ketchup
1 perch or carp
1 ginger, minced
1 clove garlic minced
3 scallion stalks, chopped
2 tablespoons beer
1 teaspoon salt

1 tablespoon lemon juice
1 tablespoon rice vinegar
How to cook sweet and sour fish
1. Remove scales, internal organs and gills of fish, and clean it well. And cut it diagonally on both sides of the fish. Spread salt and beer evenly over the fish and belly. And give it a massage Put ginger and scallion stalks in fish and belly. Marinate it for a while.
2. Use kitchen paper to absorb the water from the fish and coat the fish with starch. Then, heat a pan with oil, and fry the fish under middle heat until golden.
3. Turn the fish over so that both sides are fry until golden. Transfer the fish on a plate. And stir-fry the scallion stalks, ginger and garlic until fragrant.
4. Add 3 tablespoons of ketchup in the pan and stir-fry until fragrant. Add 3 tablespoons of sugar, 1 tablespoon of lemon juice, 1 tablespoon of rice vinegar, 1 teaspoon of salt and 1 tablespoon of beer in it. Stir-fry them well until fragrant.
5. Pour 1/2 bowl of clear water and cook until boiling. Add the fish and continue to cook it under middle heat until t the sauce has reduced to the desired thickness. (Turn the fish over once in the process.)
6. Transfer the fish on a plate. Pour the sweet and sour sauce on the fish, and then sprinkle some white cooked sesame and cooked pea. Serve.
