Salted duck egg is a Chinese dish. It has a long history in China and is very popular among the Chinese people. It is produced in many places in China, but only Jiangsu Gaoyou salted duck eggs are the most famous.
What is Salted Duck Egg?
The salted duck egg is made from fresh duck egg as the main raw material. It is a Chinese preserved food product made by splashing duck eggs in saltwater or pressing each egg in sodden, salted charcoal.
It is rich in nutrients and rich in fat, protein and various amino acids, calcium, phosphorus, iron, various trace elements and vitamins. It is absorbed by the body and has a moderate salty taste and is suitable for both young and old.
You can easily find it in the Asian market. It sometimes sold covered in a thick layer of the salted charcoal paste or the salted paste removed, may also be sold with wrapped in plastic and vacuum packed.
In the process of making the salted duck eggs, it has a briny aroma, a gelatin-like with salty taste egg white. And it also has a firm-textured round yolk that is bright orange-red, which is prized and is used in Chinese mooncakes to symbolize the moon.
How to choose a good duck egg:
1. Duck eggs are better with green shells because the green shell is harder, it is not easy to have cracks, it is not easy to deteriorate during pickling, and the eggs made from green shell eggs are easier to produce oil.
2. Choose a round egg and the egg yolk will be larger.
3. Select a sample to knock open. If the egg yolk is red and the protein is thick, it is a good duck egg.
How to serve:
Boil it in water for around 8-10 minutes. Serve directly with congee or make a delicious dish based on some recipes.
Salted Duck Egg Recipe:
You’ll need:
30 duck egg
400g salt
2l clear water
hard liquor/white wine
1 large glass jar
How to make Salted Duck Egg
1. Wash fresh duck eggs in water and brush with running water. Clean the surface of the duck egg with a scouring pad or brush. (Note that duck eggs should not be soaked in raw water for too long)
2. Dry the washed duck eggs by kitchen paper or a clean cotton cloth and leave them in a cool, ventilated place for a while. (Or you also can let them sunbathe for 3-4 hours in the early morning sun.)
3. Add 2L of water and 400g salt in a wok and heat it until boiling. Set aside and cool it.
4. Add the white wine in a bowl. Put the duck eggs in the bowl and make each duck egg wrap a layer of white wine or you can also spray the white wine directly onto the surface of the duck egg, and then put it into the jar. (In the end, use a heavy object on the top of the duck eggs to prevent duck eggs floating on the saltwater), pour the salt water.
5. Close the lid and affix the date. Leave it in a cool dark place and marinate it for 32 days. Cured eggs can be stored in the refrigerator for up to two weeks.
