Winter Melon Soup

Winter melon soup is very popular in China. It is simple and easy to make. It is a kind of common soup that can be eaten with rice and steamed buns.

Ingredients

  • 400g pork ribs
  • 400g winter melon cut into 1-2 cm pieces
  • 1 teaspoon chicken essence
  • 1 green onion
  • 1 teaspoon Sichuan pepper
  • 3 pieces ginger sliced
  • 1 teaspoon salt
  • 2 tablespoons cooking wine
  • 1 bunch coriander

Instructions

  • Wash the pork ribs and put it with the cold water in a wok. Heat the wok, and cook the pork ribs for 2 minutes to bring out the meat flavor. Remove the meat and wash off the floating foam on the meat surface with warm water. Set aside.
  • Add water, green onion, ginger and Sichuan pepper in another wok cook until boiling. Add the pork ribs in the wok and cook under middle heat until boiling. Turn the fire down, and continue to cook it under low heat for about 30 minutes.
  • Pour the winter melon and salt in the wok and continue cook for 15 minutes.
  • Sprinkle chicken essence, coriander and a few drops of sesame oil in the wok. Transfer it in a large bowl and serve it.

Notes

1. The proportion of ribs and melon can be adjusted. Stew the ribs with a small fire. The longer stew the pork ribs, the stronger the soup flavor.
2. Cook the pork ribs with a large fire until boiled, turn to medium heat and cook it for 30 to 45 minutes, add winter melon stew until it is transparent.
3. Don’t add salt from the beginning.
4. Don’t remove the fat on the ribs, fat meat to make the soup more delicious.
