Wife cake is a kind of cake with the least amount of ingredients and the simplest workmanship. It is a famous snake in Guangdong province, China.
What is wife cake?
Wife cake also called sweetheart cake or marriage pie is a traditional Chinese snack, which is made from candied winter melon, wheat flour, cake flour, sugar, sesame and other ingredients.
It originates from Chaozhou, Guangdong. The skin is grilled into an attractive golden yellow, the skin is thin and thick, the filling is moist and smooth, and the taste is sweet but not greasy.
History of the wife cake
According to legend, at the end of the Yuan Dynasty, the wife of the insurgent leader Zhu Yuanzhang (The first emperor of the Ming Dynasty) made the wife cake with wheat and winter melon to alleviate the army’s food crisis.
Later, the production method was updated on the basis of this kind of food, and it was found that the cakes made with candied winter melon, wheat flour, cake flour, sugar, sesame and other ingredients were very delicious. This is the earliest wife cake.
Wife cake recipe
You’ll need:
4 egg york
White sesame
For lard dough:
360g low gluten flour
180g lard
For water and lard dough:
500g middle-gluten flour
176g lard
200g clear water
72g sugar
For the filling:
212g lard or 160g vegetable oil
560g clear water
480g sugar
40g coconut
280g cake powder
40g white sesame
How to make wife cake
Make wife cake filling:
1.First roast the coconut and white sesame seeds in the oven. Heat a wok with water, and cook the lard and sugar under middle heat until melt.
2. Turn the fire down, add the cake powder and stir quickly. Turn off the fire, add the coconut and white sesame. Mix them well. Let the batter cool and divide it into about 30g pieces.
Make wife cake skin:
1. Mix 500g middle-gluten flour,72g sugar,176g lard and 200g clear water in a bowl. And mix 360g low gluten flour and 180g lard in another bowl. Knead them well and transfer on a workbench. Press the water and lard dough, roll the lard dough into a roughly rectangular shape, and refrigerate them for 20 minutes.
2. Roll the water and lard dough into a rectangle twice the size of the lard dough. And wrap the lard dough in and squeeze.
3. Use a rolling pin to extend the rectangular dough and fold in 2 times. And use a rolling pin to extend the dough again.
4. Use a ruler to cut the dough into four long pieces of dough and roll it into strips. Then divide each dough into 12 equal portions.
5. Tighten and fold the incisions at each end of the small dough. Squeeze with a rolling pin and place a portion of the filling in the middle.
Wrap and bake wife cake:
1. Wrap the dough with the filling and roll it flat. And tiled on a baking sheet.
2. Brush a layer of egg yolk on the surface and use a razor blade to draw 2-3 parallel. Decorate with some white sesame.
3. Place the baking sheet in a preheated oven and bake them at 160 degrees for 20 minutes. Serve it.
