Cheung Fun is one of the famous traditional snacks in Guangdong province, China. It is also the most common breakfast. The appearance looks pink and tender, and it tastes amazing.
What is Cheung Fun?
Cheung Fun is called rice noodle roll or also translated as steamed rice roll. When plain and made without filling, the rice noodle is also known as jyu cheung fan. It is a kind of rice product. And it is very popular in Guangdong and Hong Kong. Because it is cheap and delicious so that it is suitable for both young and old. And you can buy it both the humble market and the five-star superior hotel.
Cheung Fun is divided into salty and sweet. The flavor of Cheung Fun filling is mainly made from pork, beef, shrimp, pork liver and so on, while the sweet Cheung Fun filling is mainly sugar-sweetened fruits and vegetables, and then mixed with fried sesame seeds.
There are two types of Cheung Fun, depending on the tools and materials. One is mainly made of sticky rice flour and then added with wheat starch, corn starch and raw flour, mainly for tasting stuffing. The other one is mainly made of pure rice pulp, which is based on the taste of Cheung Fun skin and the taste of sauce!
Cheung Fun History:
This traditional cuisine has already appeared in the Tang Dynasty, originating from Luoding City, Guangdong Province, China.
It is said that in a drought, the crops were insufficiently harvested and the people were seriously lacking in food. The management officials of the time were invented when dealing with the problem of the insufficient food supply.
Cheung Fun – Steamed Rice Noodle Roll Recipe:
You’ll need:
For the Cheung Fun skin:
80g rice flour
70g wheat starch
1 tablespoon corn starch
400g water
2-3 eggs
For the sauce
2 tablespoons light soy sauce
1/2 tablespoon dark soy sauce
1 medium clove of garlic, minced
1/2 teaspoon salt
1/2 cup chopped shrimp (option)
1 tablespoon vegetable oil
1/2 teaspoon sugar
1 green vegetable
How to make Cheung Fun (Steamed Rice Noodle Roll)
1. Add the rice flour, wheat starch, corn starch and water in a large bowl. Mix the batter well.
2. Beat the eggs in the bowl and stir with a whisk. Set aside.
3. Pour the batter and the egg liquid in a large plate. Put the green vegetable and shrimp on it.
4. Put it in the steamer and steam it for three minutes until the surface is bubbling. Scrape from one side of the Cheung Fun skin with a scraper and roll up the wrapping material. Transfer it in a bowl and set aside.
5. Heat a wok with oil, and stir-fry garlic under small heat until fragrant. Add the light soy sauce, a little water, salt, sugar and dark soy sauce. Stir-fry a few times for 50 seconds.
6. Pour the sauce in the Cheung Fun and serve.
