Taiwanese beef noodle soup is a Taiwanese civilian cuisine spread across the streets of Taiwan. Even the “Taipei International Beef Noodle Soup Festival” is held every year in Taipei city.
What is Taiwanese beef noodle soup
Taiwanese beef noodle soup is mainly made from beef, noodles and vegetables. It was a special dish invented by veterans who crossed the sea to Taiwan in the past because they missed mainland China.
And it brings together the essence of Chinese cuisine, such as the braised flavor of Shanghai cuisine, the soup of Cantonese cuisine, and the spicy flavor of Sichuan cuisine.
Taiwanese Beef Noodle Soup Recipe
You’ll need
1-kilogram beef
Coriander
500g noodles
A moderate amount of salt
For the soup
1-kilogram Beef bone
3L cool water
3 green onions
3 ginger pieces
1 tablespoon cooking wine
1 tomato
For the sauce
Vegetable oil
1/2 onion
50g ginger
5 cloves medium garlic
40g rock sugar
2 tablespoons sweet noodle sauce
2 tablespoons bean paste (Dou ban Jiang)
2 tablespoons light soy sauce
2 tablespoons dark soy sauce
1 tablespoon cooking wine
How to Make Taiwanese Beef Noodle Soup
1. Cook beef, beef bone and clear water in a wok until boiling, turn off the heat.
2. Pour the soup into a bowl through the filter and cut the beef into 3cm pieces. And cut the green onion, ginger, onion and tomato.
3. Heat the soup and beef bone in a wok under high heat until boiling. Turn the fire down, and continue to cook the soup under low heat for 30 minutes. Prepare sauce ingredients.
4. Heat a pan with oil, and stir-fry ginger, garlic and onion until fragrant. Add the 2 tablespoons of sweet noodle sauce, 2 tablespoons of bean paste, rock sugar, 2 tablespoons of light soy sauce, 2 tablespoons of dark soy sauce and 1 tablespoon of cooking wine in the pan. Stir-fry them until the rock sugar melt.
5. Transfer the beef and sauce into the soup and cook under small heat for 4 hours. Then, season with salt. Transfer it on a bowl, and add cooked noodles. Sprinkle coriander and serve.

I recently discovered this dish at a Chinese resident near my work and I eat it at least once a week. I’m excited to learn how easy it is! I can make it myself and save tons of money, though I’ll still support my favorite restaurant.
