What is Yu Choy?
Yu Choy is a kind of green vegetable that produces plump stalks 20-30 cm high with oval-formed leaves. It has a sweet, green taste like spinach, with inconspicuous bitter and peppery notes.

How to cook Yu Choy
Yu Choy Recipe:
INGREDIENTS
• 300g Yu Choy
• 2 teaspoons soy sauce(option)
• 1 tablespoon ginger, minced
• 1/2 teaspoon salt
• 2 tablespoons garlic, finely minced
• 1 teaspoon sugar
• 1 tablespoon vegetable oil
INSTRUCTIONS
1. Wash the Yu Choy and remove the old leaves.
2. Pour a half wok of water and add salt, sugar, and vegetable oil in the wok. Cook the water until boiling. Then add the Yu Choy and cook it for about 30 seconds until the Yu Choy becomes deep green. Transfer the cooked Yu Choy on a plate.
3. Heat wok with oil, and stir-fry garlic until fragrant. Add salt and Yu Choy in the wok and stir-fry under high heat for a few times. Transfer it on a plate.
4. Sprinkle the soy sauce on the Yu Choy and serve. (Option)

It was easy to make and delicious, but the Yu Choy really shrink up, so for three people with an appetite, it is not a lot. Perfect for two though or as a side.
