Yang Chow fried rice also as known as Yang Chow egg fried rice. It is a classic cuisine of Yangzhou city, Jiangsu province, China.
What is Yang Chow Fried Rice?
It is mainly made from rice, ham, eggs and shrimp. It is very rigorous in material selection, finely crafted and elegantly processed, with a focus on color matching.
Perfect Yangzhou fried rice, the rice is clear and the hardness is just right. Together with a variety of ingredients, the whole dish looks colorful. The taste is fresh, smooth, and delicious.
Yang Chow Fried Rice History:
It is said that during the Sui dynasty, when Emperor Sui cruised Yangzhou, he introduced the fried rice he liked to Yangzhou. Some scholars believe that Yang Chow fried rice was originally from folk.
According to historical records, as early as the Spring and Autumn Period, the boat people sailing on the gully of the ancient canal in Yangzhou began to eat fried rice with eggs.
In ancient Yangzhou, when the people made dinner, they would make the leftovers with chopped green onion and eggs into egg fried rice.
During the Qing Dynasty Emperor Jiaqing, Yangzhou administrator Yi Bingzhen improved Yang Chow fried rice. Based on the fried rice with scallion and egg, he added shrimp, lean diced meat, ham, etc. And it gradually evolved into a variety of assorted egg fried rice, which tastes more delicious.
Later, through the Chinese who went abroad to make a living, especially the Yangzhou chef, Yangzhou fried rice was spread all over the world.
How to make Yang Chow fried rice
Yang Chow Fried Rice Recipe:
Yang Chow Fried Rice Recipe Ingredients:
300g white rice
3 tablespoons shrimp, remove the head, tail, and shell.
1/2 carrot, minced
1 tablespoon sweet corn kernels
1 tablespoon cooked beans
1 ham or sausage, minced
2 eggs
1 green onion, minced
1 teaspoon salt
1 teaspoon sesame oil
1 tablespoon corn starch
3 tablespoons vegetable oil
Yang Chow Fried Rice Recipe Instructions:
1. Rub the shrimps with a teaspoon of salt and rinse immediately. Drain the shrimps, and add starch, salt and a little vegetable oil in a bowl. Marinate the shrimp for 10 minutes.
2. Beat eggs in another bowl. The eggs must be whipped enough so that the egg whites and yolks are completely blended.
3. Mix the white rice with 1 teaspoon vegetable oil and set aside. Heat a wok with hot water, and cook it until boiling. Then, add carrot, corn kernels, beans and ham cook for 1 minute. Pick them up and drain.
4. Heat a wok with 2 tablespoons vegetable oil, stir-fry the shrimps until it becomes white. Transfer it on a plate.
5. Pour the remaining oil into the bowl. Wash the wok and heat it again with oil, stir-fry the egg. Then, add the white rice, ham and vegetables and stir-fry under middle heat. Add shrimps and salt and continue to stir-fry a few times.
6. Sprinkle the green onion and sesame oil. Serve.
