Ingredients

  • 200g beef
  • 350g Ho Fun
  • 1 small bunch of Chinese chive cut into sections around 10cm long
  • 50g scallion cut into sections around 10cm long
  • 50g beansprouts washed and drained
  • 1 egg

For the beef marinade

  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 1/2 teaspoon sugar
  • 1 tablespoon starch
  • 1/2 egg
  • 1 tablespoon water

For the sauce mixture

  • 1 teaspoon dark soy sauce
  • 1/2 tablespoon light soy sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt

Instructions

  • Combine all the beef marinade ingredients for the beef marinade in a bowl and mix well. Cut beef into thin slices, put into the beef marinade and mix well. Mix the sauce ingredients in another bowl.
  • Heat 2 tablespoons of oil in your wok until it’s close to smoking. Add the beef and cook it for about 1-2 minutes. Once it is cooked, remove the beef and set aside.
  • Heat 1 tablespoon oil in the wok, add the egg to give it a quick sear for a few times. Remove the egg and set aside. Then add ho fun in the wok and stir-fry until the ho fun becomes soft and fragrant.
  • Heat wok on high heat. Add 2 tablespoons vegetable oil in the wok and wait until hot. Add the beansprouts stir-fry until fragrant. Then add ho fun, beef, and sauce mixture and cook until the sauce has thickened.
  • Add Chinese chive sand scallion and fry for another 30 seconds.

Notes

1. Don’t put too much oil when frying ho fun, because the ho fun is easy to get greasy. Just need a little oil more than usual cooking.
2. You’d better not use the shovel when fried ho fun noodles. And it is recommended to toss your wok with one hand and then use another hand to fold chopsticks and help turn over the ho fun gently.
3. Before marinating the beef, you can beat the beef by hand. Because the beaten beef tastes more tender and smooth.
