Ingredients

For the filling:

  • 1kg Pork
  • 60g light soy sauce
  • 10g dark soy sauce
  • 10g borrow sugar
  • Salt
  • Spices 3 bay leaves, 30 Sichuan peppercorns, 2 star anise,1 small piece cinnamon, 3 cardamoms, 3 cloves.
  • Carrot
  • celery

For the buns

  • 320g flour
  • 160g clear water
  • 3g oyster

Instructions

Make the Chinese hamburger filling:

  • Heat a stewpan with water until boiling, add the green onion, ginger, spices, celery and carrot in the wok.
  • Wash the pork and cook it in a wok with clear water until boiling. Continue to cook it for 2 minutes. Transfer the pork in the stewpan.
  • Add salt, brown sugar, light soy sauce and dark soy sauce in the stewpan. Add enough boiled water to cover the pork. Cook the pork again for 1 hour and let it cool.

Make the Chinese hamburger buns:
