Hong Kong Style Dim Sum Chicken Feet

- 8-10 Chicken feet
- 2-3 tablespoons oyster sauce
- 1 teaspoon white sugar
- 1 bowl ice water
- 3-5 tablespoons cardamom sauce
- 2-3 ginger tablets
- 3-4 medium cloves of garlic minced
- 2-3 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 3 tablespoons cooking wine
- 1 tablespoon chili sauce
- 1 tablespoon starch
- 1/2 teaspoon five-spice powder
- 1 teaspoon pepper
Soaked the chicken feet in clear water for half an hour, and remove the nails.
Heat a wok with water, add ginger and cook it until boiling. Pour the chicken feet on the boiling water for a few minutes. Transfer them on a plate and dry them.
Pour enough oil in a wok, fry the chicken feet under 180℃/350°F for 8-10 minutes. And then, transfer them in a bowl with cold water and cover the plastic wrap and put it in the refrigerator for more than 1 hour.
Pour the chicken feet on a plate, and add cardamom sauce, chili sauce, light soy sauce, dark soy sauce, garlic, white sugar, oyster sauce, cooking wine, starch, pepper and five-spice powder. Mix well and put them in the steamer for 15-20 minutes. Serve.
