Yu Choy Stir Fry

Yu Choy is also called Yo Choy Sum. It is suitable for sowing in warm areas of the south and it is one of the specialty vegetables in southern China. This can be planted all year round.

Ingredients

  • 300g Yu Choy
  • 2 teaspoons soy sauce option
  • 1 tablespoon ginger minced
  • 1/2 teaspoon salt
  • 2 tablespoons garlic finely minced
  • 1 teaspoon sugar
  • 1 tablespoon vegetable oil

Instructions

  • Wash the Yu Choy and remove the old leaves.
  • Pour a half wok of water and add salt, sugar, and vegetable oil in the wok. Cook the water until boiling. Then add the Yu Choy and cook it for about 30 seconds until the Yu Choy becomes deep green. Transfer the cooked Yu Choy on a plate.
  • Heat wok with oil, and stir-fry garlic until fragrant. Add salt and Yu Choy in the wok and stir-fry under high heat for a few times. Transfer it on a plate.
  • Sprinkle the soy sauce on the Yu Choy and serve. (Option)
