Scallion Pancakes (Cong You Bing) is a kind of Chinese pancake. The main ingredients are flour and chopped green onion, and the taste is salty. Fujian, Shandong and other places have the distribution of snacks, which is a common food in the streets, night markets.
Tips to make Scallion Pancakes
1. Apply a layer of oil to your hands or a rolling pin to prevent the dough from sticking.
2. Making dough with 100 degrees of boiled water makes the dough softer.

Scallion Pancakes (Cong You Bing) Recipe:
You’ll need:
250g flour
140g boiled water
1/3 teaspoon salt
Vegetable oil
1 green onion
How to make Scallion Pancakes (Cong You Bing)
1. Mix flour and salt in a large bowl. Slowly pour the boiled water into the flour and mix them with a chopstick until the flour becomes cotton batt shape.
2. Cool it for a while. And then, knead it until the surface becomes smooth, or you can pop it into your bread machine to knead for 10 minutes.
3. Wrap the dough in plastic wrap and place it at room temperature for 30 minutes.
4. Transfer the dough to the working surface and evenly divide the dough into 5 portions.
5. Take a small dough and roll it with a rolling pin. (The rest should be covered with plastic wrap to prevent moisture loss.) Then, brush a layer of oil on the dough cake and sprinkle with chopped green onion.
6. As shown in the figure, the dough cake is rolled up from both sides, and then the two sides are put together into strip shape.
7. Grab the ends and pull the dough to make it thinner. Then roll up from the two ends to the middle.
8. Press the rolled dough together, and then cover with plastic wrap and let stand for 10 minutes.
9. Roll the dough into a cake with a rolling pin (be careful not to be too thin).
10. Heat the oil in a cold pan and fry the dough cake under medium heat for a while. Turn the onion cake over and continue frying it until both sides become golden.
