Tips for making black sesame paste/soup
1. Black sesame seeds will be more fragrant after being cooked;
2. The glutinous rice can also be replaced by rice, but the consistency will be slightly lower than that of glutinous rice;

INGREDIENTS
• 250g black sesame seeds
• water
• 150g glutinous rice
• 10 red dates (option), wash and remove the nuclear cuts
• Old rock sugar
• Walnut (option)
INSTRUCTIONS
1. Take one cup of cold water and soak the glutinous rice in a bowl for about one and a half hours. Pour out the water and washing the glutinous rice with clean water. Then drain it and set aside.
2. In a pan, stir fry black sesame seeds over a small fire until fragrant.
3. Place black sesame seeds, glutinous rice, red dates, and 900ml water into a blender. Blend for about 1minute until really smooth.
4. Filter the paste into sesame water. Keep the sesame water in a bowl and set aside. Blend the remaining sesame paste and 400ml water in the blender until smooth. Filter the paste into sesame water again. Pour the sesame water in the bowl.
5. Heat a pot, add the sesame water and old rock sugar in the pot and cook it under middle heat until the sauce has reduced to the desired thickness. Transfer it in a bowl, sprinkle walnut and serve.
