What is Ho Fun?
Beef chow fun is a Cantonese dish made from bean sprouts, ho fun, beef, and other materials. One of the traditional dish in Guangdong Province,China. Invented in the late Qing Dynasty of China. Ho fun also known as Shahe fen originated from Shahe Town in Guangzhou city and is known as a Char Kway Teow in Singapore. The usual way to cook is making a soup or fry. In 2012, one of a series of foods in the documentary “China on the tip of the tongue”, the second episode of “The Story of the Staple Food”
The ho fun history
In 1938, Guangzhou city was invaded by the Japanese army and became a ruin. There was a businessman named Xu Bin who had to end the business of the restaurant and run a roadside stall. In the past, the fried powder was cooked with starch, but one day, the starch just used up, Xu Bin went to the Japanese Puppet District to buy starch, but the Japanese fake did not let him pass the checkpoint, so he didn’t buy it.
At this point, there was a traitor who was going to eat fried rice in the store. Xu Bin’s father said that there was no starch to cooking the food, but the traitor thought he was cheating on him. He even pulled out the pistol threat and insisted on eating. Xu Bin just came back to see this situation, only temporarily created the sprouts, beef and fried the ho fun to deal with the traitor. Who knows that the traitor is very fond of it and will come to eat every night. At that time, it is very hard to earn money, and the starch was expensive. Xu Bin saw that this method was accepted by people, so he took the time to improve the recipe and added Guilin chili sauce, which made Xu Bin’s business very good.
After the end of the War of Resistance Against Japanese Aggression, the Dongtian Restaurant took the lead in introducing this cooking method into the banquet, and this cheap recipe became popular.

How to make Beef Chow Fun
Beef Chow Fun (Fried Ho Fun Noodles) Recipe:
INGREDIENTS
• 200g beef
• 350g Ho Fun
• 1 small bunch of Chinese chive, cut into sections around 10cm long
• 50g scallion, cut into sections around 10cm long
• 50g beansprouts, washed and drained
• 1 egg
For the beef marinade
• 1 tablespoon light soy sauce
• 1 teaspoon dark soy sauce
• 1/2 teaspoon sugar
• 1 tablespoon starch
• 1/2 egg
• 1 tablespoon water
For the sauce mixture
• 1 teaspoon dark soy sauce
• 1/2 tablespoon light soy sauce
• 1/2 teaspoon sugar
• 1/2 teaspoon salt
INSTRUCTIONS
1. Combine all the beef marinade ingredients for the beef marinade in a bowl and mix well. Cut beef into thin slices, put into the beef marinade and mix well. Mix the sauce ingredients in another bowl.
2. Heat 2 tablespoons of oil in your wok until it’s close to smoking. Add the beef and cook it for about 1-2 minutes. Once it is cooked, remove the beef and set aside.
3. Heat 1 tablespoon oil in the wok, add the egg to give it a quick sear for a few times. Remove the egg and set aside. Then add ho fun in the wok and stir-fry until the ho fun becomes soft and fragrant.
4. Heat wok on high heat. Add 2 tablespoons vegetable oil in the wok and wait until hot. Add the beansprouts stir-fry until fragrant. Then add ho fun, beef, and sauce mixture and cook until the sauce has thickened.
5. Add Chinese chive sand scallion and fry for another 30 seconds.
Tips:
1. Don’t put too much oil when frying ho fun, because the ho fun is easy to get greasy. Just need a little oil more than usual cooking.
2. You’d better not use the shovel when fried ho fun noodles. And it is recommended to toss your wok with one hand and then use another hand to fold chopsticks and help turn over the ho fun gently.
3. Before marinating the beef, you can beat the beef by hand. Because the beaten beef tastes more tender and smooth.
